Pita bread, also called pitta or pita bread or Turkish pide bread, is a round wheat flatbread made with yeast. Pita and other flat or pocket bread is traditional in many Middle Eastern and Mediterranean cuisines from North Africa through the Levant and the Arabian Peninsula to India and Afghanistan and is believed to have originated in Ancient Syria. Pita is used to scoop sauces or dips such as hummus and to wrap sandwiches such as kebabs, gyros or falafel. Most pita breads are baked at high temperatures (+700°F) causing the flattened rounds of dough to puff up dramatically. Once removed from the oven, the baked dough remains separated inside the deflated pita. This allows pita bread to be sliced and opened into pockets, creating a space for various ingredients to be stuffed inside.

Greek Phyllo Pie Recipes
A Greek pastry, phyllo is made up of tissue-thin layers of dough. The dough is used for dishes such as baklava and spanikopita. It can usually be found frozen in supermarkets. Phyllo is sometimes spelled filo. This often refers to tissue-thin sheets of flour-and-water dough, generally measuring 10 by 14 inches (25 by 35 cm), used as wrappers for savory or sweet fillings. The name derives from the Greek word for "leaf." Sold fresh or frozen, the pastry sheets must be separated and handled carefully to avoid tearing. Be sure to thaw frozen filo in the refrigerator before use. When working with filo, keep those sheets you are not handling at the moment well covered to prevent them from drying out.
